Matthew Dickson

Matthew has worked in bars and restaurants in Los Angeles , New York , San Francisco , Santa Fe and Paris for the past 20 years. In March of 2006 Matthew took over the operations for Malo in Los Angeles . As managing partner at Malo the focus became building the bar and its tequila selection. All 200 of the tequilas and mescals have been personally tasted and selected by him with a focus on having only 100% blue agave tequilas.
While interest in tequilas began with various trips to Mexico in the 80’s a true appreciation was solidified while working as the Executive Chef at the Coyote Café in Santa Fe , New Mexico with Mark Miller. It was here that his palate was developed with Mark to appreciate tequilas on the same level as food.
Currently Matthew is working on a few new tequila themed bars and restaurants to open on the west coast.
