Have you ever wanted to know more about the ancient (pre-Hispanic) origins of tequila, mezcal, sotol, and other agave spirits?  This seminar will explore the evidence for the earliest fermented agave beverages such as pulque and the first maguey-heart wines - from which all our beloved agave spirits evolved!  You'll ponder the discovery of fermentation and learn about the ancient peoples of Mesoamerica (such as the Mexica/Aztecs, Tarascans, Tarahumara, and Huicholes) who drank these beverages and their customs and beliefs about alcohol.  You'll also hear about their methods and tools for making alcohol from agave, and even consider exciting new evidence of some of the earliest agave spirit distillation methods pre-dating Spanish Contact.  If you are at all interested in the archaeology of agave spirits, you won't want to miss this session!

Mr. French is in demand outside the distillery for his expertise on Tequila’s older sibling, Mezcal, for seminars and tasting dinners. He takes us on a journey through the history of this magical, mystical, mythical spirit, the oldest consumed distilled spirit in North America. Learn why this feature presentation captivated the audience earlier this year when it premiered to rave reviews at the Spirits of Mexico Las Vegas. This seminar includes audience interaction, in the form of sipping-you will be introduced to tastes of mezcal varietals including Espadin, Barril and the King of agaves, Tobala.

SOTOL: THE JEWEL OF CHIHUAHUA

Sotol is distilled from the desert spoon plant, a variety of agave that grows wild in the Sierra Madre mountains in the only state where Sotol can be produced, Chihuahua. These agaves tend to be plumper and smaller than their cousins; one Sotol plant, on average, produces only enough for one liter. Last year, Don Cuco Sotol made its debut at the Festival with a reposado and anejo. Both won Gold Medals and both return this year. Jaclyn elaborates on Sotol and its versatility in cocktails.
